Tableside Caesar Salad

1. Add capers, garlic, anchovies, and freshly cracked pepper into a big a wooden bowl. Use a fork to mash everything into a paste.
2. Add egg yolk and Dijon mustard and mix.
3. Add a squeeze of lime and splash of Worcestershire sauce.
4. Whisk in extra virgin olive oil, starting with 1/2 cup and adding more depending on amount of people you’re serving and desired consistency.
5. Toss cold romaine into the dressing. Serve on cold plates and top with Parmesan and croutons. Enjoy!
