Line a baking sheet with parchment paper or a silicone sheet. Scoop small mounds of pomegranate arils onto the sheet. Melt 1/2 cup chocolate chips or a chocolate bar cut in pieces with ½ tsp coconut oil, microwaving in 30-second increments and stirring between each until smooth and liquidy (or melt using a double boiler). Drizzle melted chocolate over each cluster. Optional: add flaky sea salt on top of the chocolate. Would also be delicious with chopped pistachios or almonds on top.
