Inspired by Erewhon Market's Shaved Asparagus Salad, this homemade version is fresh, simple, and absolutely delicious. It combines shaved thick asparagus, arugula, cooked chicken, Parmesan, and toasted pine nuts with a simple olive oil and lemon dressing.

Instructions

1. Start by toasting your pine nuts. Add pine nuts to a dry skillet in a single layer over medium heat and toast until fragrant and golden, giving it a shake occasionally so it doesn’t burn. Once toasted, set aside.
2. Snap off the ends of the asparagus. Did you know, they’ll naturally snap right where they should!? This is better than trimming them with a knife.
3. Using a Y-shaped peeler, peel the asparagus. Place the asparagus down on a cutting board with one hand and shave it with the peeler with the other hand. Turn as you go so you can peel each side of the asparagus, and once you get to the point where you can’t peel any further, just chop what’s remaining into bite-sized pieces.
4. Add a bed of arugula into a shallow, large bowl. Top with shaved asparagus, chicken, fresh Parmesan, and toasted pine nuts.
5. Drizzle olive oil over the top, add lemon juice, salt and pepper. Give everything a good toss.
6. Divvy into bowls and garnish with extra Parmesan and pine nuts. Enjoy!!
