Mini Banana Pancake Bites

1. Slice bananas into 1/3 inch pieces and prepare your pancake mix. For the batter, you can use your favorite boxed mix or a homemade recipe. The example given uses 1 cup of Birch Benders paleo pancake mix + 3/4 cup water + a sprinkle of cinnamon + a splash of vanilla extract.
2. Warm 1-2 tablespoons of oil or butter in a skillet over medium heat.
3. Use a fork to dip each banana slice into the pancake batter, ensuring it's coated evenly on both sides. Allow any excess batter to drip off and then transfer the coated slices to the warmed skillet.
4. Cook the banana bites until they are golden brown on one side, then flip them to cook on the other side until golden as well. Once cooked, transfer them to a plate.
5. Serve with your desired toppings, such as a drizzle of nut butter, fresh berries, and/or maple syrup. Enjoy!
