For the sweet tooth girly who wants to eat lower sugar, higher protein — you need these Cookie Dough Protein Truffles in your life! They’re gluten-free, paleo, low in sugar and truly taste like rich truffles! You have to make them.
1. In a bowl, whisk together almond flour, protein powder, and cinnamon.
2. Add nut butter, maple syrup, vanilla extract, and coconut oil. Stir to combine until everything is incorporated.
3. Fold in chocolate chips.
4. Using a small cookie scoop, scoop the dough into balls, then roll them in your hands and place on a parchment lined plate or sheet pan.
5. Freeze for at least an hour.
6. Melt chocolate with coconut oil in the microwave (30 seconds at a time, stirring in between) or in a double boiler.
7. Dip each cookie dough ball in the chocolate, then remove with a fork and let any excess chocolate drip off. Place back on a parchment-lined plate and sprinkle with sea salt.
8. Freeze 10 minutes to set. Then enjoy! Store in the refrigerator.
