A delightful and customizable Valentine's Day treat, these chocolate covered strawberries are easy to make using lower sugar chocolate and your favorite toppings like pistachios, shredded coconut, and sprinkles.
1. Make sure your strawberries are totally dry before you dip them, otherwise you won’t get a nice even layer of chocolate.
2. To melt the chocolate: you could always do it in the microwave, but it's recommended to melt it on the stove in a make-shift double boiler. Just fill a small pot halfway with water and bring it to a low boil, then reduce to a simmer. Place a large heat-proof glass bowl on top of the pot and add your chocolate chips or a chopped chocolate bar to the bowl with 1 tablespoon coconut oil. Stir each minute or so until melted and smooth.
3. Remove from the heat and get dipping right away. Hold the strawberries by the leaves, dip them in the chocolate, and let the excess drip off.
4. Place the dipped strawberries on a parchment-lined plate. Sprinkle with your chosen toppings (like chopped pistachios, shredded coconut, and sprinkles).
5. Place them in the fridge to harden for a couple minutes.
6. Once hardened, store in a cool location on your counter or in the refrigerator if you’re not serving them until later. They are best within 1 to 2 days!
