A simple, easy, and quick build-your-own taco bar featuring Instant Pot Shredded Salsa Chicken, Simple Ground Beef, and a homemade Guacamole, along with suggested taco sides to create custom tacos, taco salads, or taco bowls.
INSTANT POT SHREDDED SALSA CHICKEN:
1. Season chicken breasts on both sides with salt and pepper.
2. Place the seasoned chicken in your instant pot. Pour your favorite salsa over the chicken.
3. Close the instant pot lid, and make sure the valve is pointing towards “sealing”. Cook for 10 minutes on high pressure.
4. When the timer is done, carefully turn the valve to “venting”. Remove the lid and transfer the breasts to a bowl or a cutting board. Using two forks or a mixer, shred the chicken.
5. Put the shredded chicken back into the instant pot to stir once more in the salsa before serving.
*This can also be done on the stove in a saute pan or pot if you don’t have an IP!
SIMPLE GROUND BEEF:
1. Warm 1 tbsp extra virgin olive oil in a medium sauté pan over medium heat. Add ground beef and start to crumble it up and brown it.
2. Add 2-4 tbsp taco seasoning based on your preference + 2 tbsp water. Simmer & stir together until everything is evenly seasoned and cooked.
MY GO-TO GUACAMOLE:
1. Slice the avocados in half, remove the pits (save a couple of them!) and scoop avocado into a bowl.
2. Mash the avocado with a fork. Add the rest of the ingredients and give it all a stir.
3. Season to taste with salt and pepper. Add the pits back into the bowl to keep the guacamole from browning.
