Baby-Approved Egg-Free Apple Sauce Banana Pancakes
5 mins prepServes 1
Experimenting with egg-free recipes for babies, these pancakes (or fritters) are a delicious and devoured treat for little ones. They are thicker than typical pancakes, and nut butter can be added if not avoiding nuts.
1. Mash banana. Then stir in apple sauce.
2. Add oat flour, coconut flour, and cinnamon and mix until combined. Batter will be thicker than typical pancake batter.
3. Warm coconut oil in a pan. Using a cookie scoop, scoop the batter into the pan, then flatten it using either the back of the scoop or a spatula.
4. Cook a couple minutes until golden. Use a spatula to flip (you may need one spatula in each hand to help flip it, they’re a little slippery). Once you flip, flatten again with the spatula. Cook another minute or two until golden and remove from heat.
5. Cut into strips or small pieces. Once cool enough, serve to your babe! Enjoy!
